Also known as “An excuse to have lemon curd in my home.” Seeing it on the shelf at the store sparked inspiration for this one, especially knowing there were already crispy ginger cookies in the cart.
Ingredients
- Luscious Lemony Meringue Plush Puffs and Chocolate Chipetta Plush Puffs
- Ginger cookies, such as Trader Joe’s Triple Ginger Cookie Thins
- Lemon curd
Spread a liberal amount of lemon curd on one ginger cookie. Toast up a Luscious Lemony Meringue and a Chocolate Chipetta marshmallow until soft and melty. Top with another ginger cookie.
The combination of lemon and chocolate is very sophisticated. The crispy ginger cookie ads a nice bite that sends you to make another s’more. And another.
