I. Love. Girl Scout. Cookies. They are the awesomest. Every year I get a few choice flavors and we savor everyone. The Thin Mints are in the freezer, the hubby is enjoying the Tagalongs and the Samoas are already gone. Those go fast here. One of my favorites seems like the most simple and “boring” varieties, but shortbread Trefoils are so buttery and flaky that they are just delicious. So, I thought I’d make a s’more with them.
I used another of my favorite gourmet treats; the CocoNUTS Walnut Butter from Crazy Go Nuts. This nut butter is really, really good and I thought it would be a great ingredient for a s’more. I was right! This walnut butter is made simply with walnuts, organic coconut, and organic sugars. That’s it, but it’s great.
So, to the s’more. Since the walnut butter is made with coconut, I thought our Toasty Coconut marshmallows would pair well.
- 1-2 Toasty Coconut Plush Puffs Handmade Gourmet Marshmallows (depending on how gooey you like your s’mores)
- 2 Trefoil Girl Scout Cookies
- 1/2 TBS – 1 TBS of Crazy Go Nuts CocoNUTS Walnut Butter
Smear the walnut butter on one of the Trefoils. Lick the spoon. Toast up the marshmallows over your gas stove, or a wood fire if you’ve got one going. Place the marshmallows on top of the walnut butter and sandwich everything with the other Trefoil. Chow down.
