A few years ago, we discovered the MOST AMAZING FOOD PRODUCT EVER at a Fancy Food Show: a spread made from the butteriest, most delicious cookies ever called Biscoff. Biscoff Spread Is. Awesome. We even made a very delicious s’more out of this spreadable cookie heaven.
However, Biscoff Spread was hard to come by. But lo! It is now available at World Market (Cost Plus) and Gelson’s market and even Fresh & Easy markets (where they sell Plush Puffs too!). AND there is even a crunchy kind! Woot!
But, while we do go to some of those places here and there, like most busy working parents in the Valley, we often go to Trader Joe’s. And all the buzz at T.J.’s lately is about Trader Joe’s Speculoos Cookie Butter. It’s a little different than the Biscoff Spread, but it’s the same idea and very, very good.
We are not too proud to admit that 99% of the time, we just dig in with a spoon. But every once in a while, we get creative. And the round Plush Puffs MugToppers were the perfect inspiration. Thus, this week’s S’more!
Ingredients (for one s’more):
- One Vanilla Bean MugTopper from Plush Puffs Gourmet Marshmallows
- One small flour tortilla
- About a 1/2 Tbs. of Trader Joe’s Cookie Butter (or more if you want)
Turn your broiler on your oven on. Get a round cookie cutter that has a slightly larger diameter than the MugTopper OR get a regular sized coffee mug and a knife. Cut out a round circle from the tortilla by pressing it out with the cookie cutter or by cutting around the top of the mug.
Spread the Speculoos Cookie Butter on the tortilla round. Place the Vanilla MugTopper on top of the cookie butter.
Place the tortilla with the toppings on a cookie sheet and place it under the broiler until the top of the MugTopper marshmallow is just browned. Enjoy this s’more with a fork (it’s gooey good!).
