I’ve been wanting to make a s’more with marzipan for a while now, but I haven’t actually bought any – which makes it hard to make something with marzipan. But, there it was in the baking aisle at the grocery, right at eye level, saying “hey. Now’s the time. Buy me. I’m yummy.” And I’m glad I did. This is a very tasty s’more that I quickly wanted seconds of.
- Chocolate Chipetta and/or Sydney’s Cinnamon Plush Puffs Gourmet Marshmallows
- Neutral flavored butter based cookies (I used the “Rich Tea” ones from Lu Biscuit)
- Marzipan from the baking section, though any marzipan will do
The marzipan I found at my local store came as a cylinder so it was easy to cut 1/4 inch rounds from it that fit nicely on the cookies. I place a round on top of 2 cookies. I toasted a Sydney’s Cinnamon Plush Puff and put it on one of the marzipan rounds and a toasted Chocolate Chipetta Plush Puff on the other. I topped them off with two more cookies and ate them up. I liked the chocolate one better because it had a better contrast to the marzipan. The cinnamon, however, really complemented the almond in the almond paste very well.
