Shamrock S’more. Sh’more. S’mrock. SHA’MORE!
Seems that around St. Patrick’s Day, if you’re not eating corned beef or drinking green beer, you’re eating something minty and green. So, here’s a minty-green s’more that takes advantage of the fact that it’s also Girl Scout cookie season.
Ingredients (for one s’more)
- One Vanilla Bean marshmallow from Plush Puffs Gourmet Marshmallows
- 2 Girl Scout Thin Mints
- 1/2 Tbs. scoop of mint chip ice cream
Make sure the ice cream is really, really frozen so it stays cold long enough to eat. Place a scoop of ice cream on one of the cookies. Quickly toast the marshmallow, put it on the ice cream and top with the other cookie. Eat it up before it totally melts. It’s messy, but soooo good. Minty, creamy and the hot of the marshmallow works really well with the cold ice cream.
